Farm to fork

During the markets, visitors have the opportunity to experience our Canteen. What makes it special? The dishes that are cooked here are prepared from ingredients from our market vendors, so the ingredients go from the farm directly to the plate. This type of gastronomy is called Farm to Fork.

Chef Daniel Karas and his colleague Filip Urbanič start early on Saturday mornings. They have to be among the first at the markets to buy fresh ingredients from the vendors. They then start cooking the Saturday menu from those. Everything has to be well organized and timed, but they have no problem with that. Daniel Karas worked as a chef in a five-star hotel restaurant, and Filip Urbanič worked in a Michelin restaurant in Denmark.

The menu is issued from 11 a.m. until sold out. Visitors have a choice of soup and a market bowl containing 4 types of vegetables (roasted, steamed, raw and fermented), rice and tofu, or meat according to the daily menu. If you only want something smaller, two types of tapas are available every Saturday. The simple form of the lunch menu always brings different content, because the market bowl always corresponds to the given season. It looks different in spring and different in autumn. Dozens of types of vegetables alternate in the markets throughout the year, and the market bowl reflects this seasonality.

All waste, whether in the form of cooked or raw food, eventually ends up in a composting station, which we covered in a separate blog. The processed compost then travels to the farms of our sellers, creating a closed circle. Nothing is wasted.

For us, Saturday food markets were already at the very beginning of our operation within the Old market an absolute priority. We cared about getting back the food into this wonderful space, and with it, above all, its producers from the wider region. Already in ancient times, farmers came to the market hall and the square in front of it with their goods from beyond the banks of the Danube and the Moravia, and you usually spoke in Slovak, German and Hungarian at the market.
